One of her dishes became so popular that Chef Vikas Khanna added it to the anniversary menu of his Michelin-starred restaurant “Bungalow” in New York – just for a day! Want to try it at home? Here’s the full recipe in simple steps.

🍽️ What’s Special About Tejasswi’s Dish?

She gave an Indian twist to the Italian dessert “bombolini” and created a spicy, savory version called “Dosa Bombolini.” Instead of sweet doughnuts, she made mini dosas (appe) filled with nutty sesame chutney and served them over a flavorful pumpkin gravy.

🧑‍🍳 Here’s How You Can Make It at Home:

Step 1: Make the Dosa Batter

  • Soak:
    • 2 cups rice
    • ½ cup split urad dal
    • ½ tsp methi seeds
  • Soak in water for a few hours.
  • Grind the soaked ingredients with some water to make a smooth batter.
  • Keep the batter aside for a few hours or overnight to ferment.

Step 2: Prepare Til (Sesame) Chutney – the Filling

  • Dry roast:
    • ½ cup sesame seeds
    • 3–4 garlic cloves
    • 2 dry red chillies
    • 1 small chopped onion
  • Roast until the sesame seeds turn golden and everything smells good.
  • Transfer to a blender. Add:
    • Salt
    • Lemon juice
    • A little water
  • Blend into a thick chutney paste.

Step 3: Make the Pumpkin Gravy (Chutney Base)

  • In a pan, heat 1 tbsp oil. Add:
    • 4–5 curry leaves
    • 2–3 dry red chillies
    • 3–4 garlic cloves
    • 1 tbsp chana dal
    • 1 chopped onion
    • 1 chopped tomato
  • Add:
    • 1 cup chopped pumpkin
    • ¼ tsp turmeric
    • ½ tsp coriander powder
    • ¼ cup grated coconut
    • ¼ cup water
    • Salt to taste
  • Cook until soft, then blend into a smooth gravy.

Step 4: Cook the Appe (Mini Dosas)

  • Use a paniyaram/appe pan.
  • Pour the fermented dosa batter into the molds.
  • Cook on medium heat until golden brown and crispy on the outside.

Step 5: Put It All Together – The Dosa Bombolini

  • Take the til chutney and stuff it inside the cooked appe using a piping bag or by slicing them and adding the chutney.
  • On a plate, spread the warm pumpkin gravy.
  • Place the stuffed appe on top of the gravy.
