They told us to learn French and Western cuisine. People used to say, ‘Desi chefs can’t be Michelin chefs; only white people can.’”
Vikas explained how he stayed determined to prove them wrong. “Every classmate chose Western food, but I stuck with Indian cuisine. I didn’t get a job after school because they said, ‘He’s a Desi chef; Desi food has no value.’ Even in America, I held on to my belief that Indian food’s time would come. And then, the clock changed.”

Vikas shared a proud moment when his restaurant was the top reservation spot during Donald Trump’s presidency. Contestant Rajiv Adatia praised Vikas, saying he has made every Indian proud.
